Everyone Jennifer here today I'm showing you my favorite muffins. These are healthy carrot muffins using pulp from juicing so let's get started.

Blending the Carrots

In my blender, I'm putting roughly one and a half cups of water for carrots and a whole apple. Now, this is if you're making a carrot juice which many people enjoy carrot apple juice. I often make it and I just don't know what to do with the pulp afterward. So I'm blending it in my Vitamix you know I got a Vitamix for my birthday.

I held off for a long time but boy do I love this machine. I mean look how easily it blends both hard carrots it's really amazing. So I love making this juice we often and when I finish it in the blender I put it to restrainer.

You can see I'm pushing it through so the juice is going to go through and I'm going to be left with this wonderful pulp afterward. It's such a waste to throw this pulp away. You can actually eat it because it's full of fiber which I often do. I'm doing this on a Saturday morning you know make up love in my juice.

Alright so let's make our muffin. These are the ingredients you're going to use. I'll leave the recipe linked below but basically look at the ingredients. It's healthy whole wheat flour honey applesauce. That's how we're going to be sweetening this so let's begin.

Making the Batter

We're going to be putting one-and-a-half cups of whole wheat flour in our bowl. We're going to be mixing that with one teaspoon of baking soda. Now as you can see I have my daughter helping me here.  She's handing me the salt I'm doing it back to her she's but to help her.

So I'm putting some salt in and some cinnamon. You know I actually don't measure very much I usually kind of eyeball things. So that's roughly one teaspoon cinnamon then you have two tablespoons of melted butter.

There's the beaten egg I have half a cup of honey and I'm going to put one cup of applesauce. That's how we're sweetening it. Some vanilla extract and of course the carrot pulp. I'm using just one cup here but you could have doubled this recipe.

I had enough to make two and that's what it looks like. Go ahead and stir that together this makes such a moist muffin. I'm telling you with the applesauce and the carrot pulp, it is just moist and delicious. I'm not even kidding you when I say it's my favorite muffin, so we're going to cook it now.

Baking

Just get some cooking spray, spray a muffin pan and fill the muffins about 3/4 of the way full. So this should make about a dozen muffins but I actually had room for two more. So I made 14 muffins and at 350 degrees for about 18 minutes in the oven.

Here they are, the healthy carrot muffins. I love having them warm out of the oven with a pad of butter and a cup of tea. They are so good you can freeze them as well. Just take out one every morning as you need it. My kids love it too.
