Hi everyone and welcome to my every day and welcome back to my kitchen. Today, I'm going to be making a family favorite, I'm making my healthy banana muffins. I thought I'd we share the process with you guys and share my recipe.

This recipe was created by trying a whole bunch of different recipes. I took a bunch of different favorites and kind of combined and took things out. Added things in and so this is what I came up with.

It is super, super easy, my kids love it. It's super healthy, it's really good for you. Truthfully when I make it, it doesn't last more than a few days. If you're interested, check out how it is that I make my healthy banana muffins. Just stick around and follow along with me.

Okay, I have gathered all of the ingredients that I need for this healthy banana muffins recipe. I have also pulled my hair back so that I can make sure that I don't get any hair in.


So, just to show you guys what it is that I have what our ingredients are. Basically, you're going to need some whole wheat flour. I just buy the generic whole wheat flour from the grocery store. So you can absolutely do that or use your favorite whole wheat flour, so that's what I have here.

Also, you're going to need some margarine I like Becel margarine. It is heart-healthy you can probably use butter as well but this is what I use. You're also going to need some baking soda and some baking powder.

Also 1 large egg and of course, you're going to need your bananas. So this is where I usually store my bananas. We have been staying away from them because we really want to make banana muffins. They are starting to ripen, they're just brown enough that nobody wants to eat them this way.

So that is the perfect opportunity to make healthy banana muffins. I also have some chocolate chips and those are absolutely optional. We do not have to put them in this recipe. This is just something that I added for sweetness because as you can see I have absolutely no extra sugar or sweetener here.

Tips for Ingredients

There are no artificial sweeteners and that is why it came up with this recipe, the difference between what I found with all the other recipes. I kept finding recipes that had sugar or artificial sweeteners. So this way I'm just using bananas but in order to awful entice my children, we have these really healthy banana muffins.

It definitely helps to have some chocolate chip. So in this video for you guys in closer and how you just watch me pull this together. Just what you can see just how easy it is to do okay. So I have my bowl here and of course, before I start I'll let you guys know that I will link the whole recipe down below in the description bar.

I have my bananas here, this recipe I find works best with about 4 or 5 bananas. Most banana muffin recipes call for 3 bananas but I like to add 4 or 5. That way it helps me to eliminate putting in any extra sugars because the banana helps to sweeten that the banana muffins a little bit more.

I also liked them very gooey and also then you're increasing the serving of fruits that you have in each muffin. So just going to peel the bananas and put them in this hole.

I love this recipe especially when I have a lot of leftover bananas that we haven't had a chance to eat. We love it so much that we actually sometimes will buy extra bananas in order to have some to eat and some to make this banana muffin recipe. I have washed my hands for those of you who may be concerned about that.


I just squish out the bananas, it is a perfect consistency right now because it is nice and soft. Then I'd like to take a potato masher and I just mash up the bananas. You can use a blender or a handheld blender if you wish in order to get a banana a little bit more, so there is a thinner consistency.

I like to have a little bit of chunky in my banana muffin so I really don't mind that. So once I get a consistent just kind of goofy and mucky and wet but I can kind of just stir through. That is enough.

Then I take our 1 large egg, and I just crack it in and mix it with the banana. I also then take they sell margarine, and I grab a measuring 1/3 measuring cups, I just scoop out 1/3.
Then I pack it in a bowl and then I microwave it just long enough. So that it's softened so that I can put it in the bowl with the banana mixture and stir it all up.

So I'm just going to do that now. Once again for about 30 seconds and that should be enough time for the margarine to soften nicely enough to be mixed with banana mixture. So here you can see what to the margarine looks like. Once the margarine is all melted, I'm just going to add it to the banana mixture a passable. Put up the measuring cup in the sink because I no longer need it.

Then just stir it up I just use a wooden spoon. I just stir up egg, the margarine, and the bananas until it is all mixed together. It's nicely mixed together, then I grab some of the baking powder. I grab a teaspoon and I just scoop out 1 teaspoon of baking powder and I put it in. Then I grab 1 teaspoon of the baking soda and I put that in. Then I just mix it all together, you have to make sure that your baking soda and your baking powder is nicely mixed. Dissolved within your mixture.

Tips for Mixing

I have had situations where it has not been mixed very well and you bite into healthy banana muffins and get, like this salty powdery texture in your mouth. It's just because the baking powder and the baking soda haven't been dissolved nicely. So once that's all done, then you take your whole wheat flour and you're going to measure out a cup and a half. I'm going to grab one it sure it's nice and even I don't worry too much. It doesn't have to be so precise and then there's half a cup shake it out and pull even and pour it in.

Then I just mix it all together. Let's grab the spatula, sometimes I like to use a spatula just to help me clean off the outside of the bowl. Make sure there's no flawed stuff to the outside of the bowl, make sure everything is mixed nicely. So once everything is mixed together like that, you can go ahead and just put it in your baking cups in your muffin tins. In my case, I like to add the chocolate chips.


So at this point, this is when I would add the chocolate chip and I'm just using the Hershey's chocolate chips or semi-sweet chocolate chips. You can use the milk chocolate chips, any kind of chocolate chips that you wish. Open up the bag here and I don't use any sort of measuring cup for this.

I just kind of put some in the palm of my hand and kind of judge it that way, I don't want to put too many in either. I just want to put some in, enough to give it a little bit of flavor and of course as I mentioned keep my kids happy.

So then I just mix the chocolate chips in so that it's evenly distributed. So when we make the muffin there are actually chocolate chips in every single muffin, add more not very many.
Okay so at this point, I'm ready to put it in the muffin tins and I use cuss cake liners.


I just buy 1 from the dollar store, these are just called baking cups we use, so these are the ones that I use. So I'm just going to clean up the mess from all the ingredients that I have. I grab my muffin tins and start putting the batter inside baking cups.

Okay so here's my muffin tins yes they are very well-loved. I promise they are clean, then I just take my baking cups and I put one in each one of the muffins. Man, you can double this recipe and make 24 instead of 12.

You can even double the recipe and make bigger muffins, especially if you are a lover of muffin tops I love doing that and you get a nice big breakfast of healthy banana muffins.

Ok so now I'm ready to scoop up the mixture and put it in the muffin pins, you can use a number of different ways. I sometimes use this little scoop here and I have done it that way, if you want to get nice even falls into your muffin tins. I sometimes just like to use an old soup spoon because I just have it down to kind of so how much I need to scoop up.

So that's what I like to use, I just grab some of the mixtures and plop it in. I find that will do just fine for me, it's about 1/2 scoop of this spoon. When I do it but this does absolutely help if you can get your hands on one of this little.

I guess it's like an ice cream scoop for some people uses it, for mashed potatoes, it can be really nice and really fast and give you a nice even ball of mixture to put in the bottom.

So I have a bit of mixture in all of them. I'm just going fine add a little bit of what's left here to the top of all of that. a little bit more and not waste any of what here, mostly it just needs to go in the ones that I did with the spoon. Usually, it does take one and a half scoop and there we go.


We are ready to put these in the oven. So I just proceed the oven and put the muffins in at 350 degrees. I set a timer for 20 minutes, so now we just wait.

So there's about 2 minutes left on the timer on the stove, but my oven has a tendency to be a little bit stronger. So I actually just check the muffin, you can use a toothpick and just check and if comes out clean, then you know that it's right. I checked and they ready to come out.

Okay so I just pulled out the muffin and they're looking really really good. I'm going to zoom in, you can take a look at what they look like when they come out. So here are the healthy banana muffins, this is what they look like when they come out of the oven.


Like I said they are extremely healthy, there was no added sugar. Other than the chocolate chips which were optional that I did add in.

I have done a lot of research, I've tried many different recipes. This is a family favorite and the best part is each muffin has at least one serving of fruit. So you can feel good about that you can feel good about eating it yourself, serving it to your family.
