So, a great substitute to consider is baking powder. It works effectively, as waffles need not have much leavening power. The substitute works only for baking items that need less than three eggs. Anyways, here is the basic vegan Bisquick waffles recipe to try out.
- 1.5 tablespoons of water.
- 1.25 cups of almond/coconut milk.
- 3.5 tablespoons of vegetable oil.
- 2 cups of Bisquick mix.
- 1 teaspoon of baking powder.
Start by heating the waffle maker. Meanwhile, whisk the mix, two tablespoons of oil, and milk in a big bowl. Then, take another bowl and whisk the baking powder, water, and remaining tablespoons of oil. Do this quickly so that all lumps of the powder are broken to smoothen the mix.
Now, mix this baking powder fluid to the batter that includes Bisquick and whisk until a nice blend is visible. Then, allow the mix to settle down for the next three minutes so that it thickens.
Next, apply some vegetable oil to the waffle maker. You can alternatively opt for a cooking spray. Now, scoop the maker with around 2/3 cup of batter and leave it for five minutes so that the waffles cook well. In case your waffle maker has a steady light, it will go off when waffles are ready.
Tip: To this recipe, you can give a crunchy texture by adding 1.5 cups of toasted walnuts or dried cranberries or currants. You can even add a teaspoon of vanilla extract to make flavorful waffles.
