Ok, everyone, I am making sweet creations. Tonight I'm going to be making some spinach basil pesto. This is my second attempt at doing this I am going to be using my KitchenAid blender. I do not have a food processor so I'm going to show you guys how to do this in your blender, so let's get started.

Ingredients

I'm going to remove this and I have all my ingredients pre-measured here in front of me. So this is the cup and a half of spinach I'm going to put this in. This is my 3/4 cup of fresh basil I have a bag of pine nuts.

It's already pre-measured to 1/2 a cup as the recipe calls for so I'm just going to add the whole bag. I have my half a cup of fresh grated Parmesan and then in this bowl, I already have my lemon juice there, salt pepper and the chopped garlic.

So I'm using my spatula to go ahead and add all of that ok. The last ingredient of this recipe is the extra virgin olive oil it's 1/2 a cup.

Processing

This is the only difference between using a food processor and using a blender using a blender. You're going to have to add the olive oil right away. Just mix it all at one time instead of slowly adding it as you would do in a food processor.

I'm going to use my spatula to get all of the olive oil out of my measuring cup so that's it. I'm just gonna shake it around and make sure my olive oil gets to the bottom down there. Stuff this on put the leg on nice and tight and turn it on and I am going to puree.

I just like to stop and check it and want to stir it up. Make sure it's all getting in there and it actually only takes a few seconds as you will see here. So don't be afraid you do not need a
food processor for this. The only reason I have curated it as long as I have is just to make sure that all of the pine nuts do get chopped up finely in here.

So as you can see here I'm done so that's this basil spinach pesto recipe. It's found on allrecipes.com. This stuff is great on pasta you can use this fresh pesto instead of using marinara sauce. One of my favorite ways to use the pesto is on my bagels. So I take a toasted bagel spread my cream cheese on it and a layer of fresh pesto and then I add a Roma tomato on top.
