Hi everyone and welcome back to my kitchen. I absolutely love cranberry flavored desserts during the holiday season, this next cake is no exception. I'll be making my cranberry orange cake with a white chocolate cake layers. These cake layers are so moist and delicious I'm going to flavor them with some orange zest.
Then I'm going to make a cranberry raspberry orange sauce to fill on the inside. We're going to frost this cake with an orange whipped cream frosting. You guys are going to love everything about this cake.
Making White Chocolate Cake Layers
Let's start things out with those our white chocolate cake layers. This recipe is really similar to my basic vanilla cake recipe. I have softened 1 and 1/2 cups of butter and to that, I'm going to add in 1 cup of sugar and about a teaspoon of vanilla extract. Grab my hand mixer and then cream this all together for a few minutes.
Next add in 6 large eggs, going to add a couple eggs at a time and give this mixture a good mix after each addition. Next, add in one and a half cups of warm milk and the zest from one orange for my dry ingredients. I've measured out 3 cups of all-purpose flour going to add in four and a half teaspoons of baking powder 1/2 a teaspoon of salt. Then mix this all together and then sift the dry ingredients into the cake batter.
Mix the dry ingredients into the batter for about 30 seconds just until the flour is incorporated. Then pour in a 1 cup of melted white chocolate chips and mix that in. Divide the cake batter evenly between four 8-inch cake pans and blind the bottom with parchment paper. You can also bake this in two 8-inch cake pans and then split the layers and half once they're completely cooled. Then spread that batter evenly to the edges and these layers are ready to go into my oven.
I have it preheated to 350 degrees Fahrenheit and the layers will bake for about 25 to 28 minutes, you want that top to be completely set. Well once they're baked just take them out and let them cool completely on a wire rack. While my layers are baking I'm going to make my orange cranberry sauce for the filling.
Making Cranberry Sauce
I have 3 cups of whole cranberries in my saucepan here. I'm going to add one cup of fresh raspberries you can also use frozen ones half a cup of white granulated sugar. one cup of water and the zest from one orange. Then grab a spatula and give this a good mix all over the mixture to come up to a simmer.
Then let it cook away for about 20 minutes allowing those cranberries to burst open. Let this mixture thicken into a jelly and this looks just about done. I'm going to take it off the stove top. Place it into a bowl set it into the refrigerator and allow it to cool completely.
My cake layers are completely cold my cranberry sauce is cooled. Now I'm going to make my orange whipped cream frosting.
Making Whipped Cream Frosting
So into my mixer bowl, I'm going to add 3 cups of chilled heavy cream and about one cup of confectioner's sugar. I'm going to whisk this on medium-high speed for about 3 to 4 minutes until it gets stiff and fluffy peaks.
Now in a separate Bowl, I've softened 8 ounces of cream cheese, you can also use mascarpone. I'm going to add 1 cup of melted white chocolate chips a teaspoon of vanilla extract and zest from one orange. Then mix this together for a minute or two until the mixture is creamy.
Then I'm going to add my cream cheese and a white chocolate mixture to my whipped cream. Mix this for a few minutes scraping down the mixing bowl a couple times until you get stiff and fluffy peaks. This frosting is just so light and fluffy you can eat it with a spoon.
I'm going to take out a few cups of the frosting and place it into a separate bowl. I'm going to add a few drops of red food coloring and take a spatula and mix that in really well. Now let's put this cranberry orange cake together.
I have my whipped cream my cake layers and my cranberry raspberry sauce. The last thing I did was squeeze some fresh orange juice from those oranges that I dusted. What I'm going to do just grab my pastry brush and generously soak each layer. Just going to add some more orange flavor and make those cake layers super moist.
Then I'm going to add a generous amount of that cranberry raspberry sauce onto each layer and spread it within one inch of the border. Then pile on that whipped cream. Now let's cut into this cake to see what it looks like on the inside.
Just grab a sharp knife and check this out isn't that the most gorgeous cake? Absolutely love the details the cranberry, that whipped cream. This is going to taste amazing, isn't? This cake absolutely stunning, I love how the ombre effect frosting turned out. Then those dollops of that red whipped cream on top really finished this cranberry orange cake off.
Now it's time to dig in and enjoy this now. What I like to do is serve that extra cranberry sauce on the side. Just add it to every single slice and it just adds you know that tangy flavor to this cake time to dig in.
